Savory spices and a smart cooking technique will make this heart-healthy dish a regular on your table. Tilapia fish gets its crunch with a panko-crumb coating in the air fryer. Colorful tomatoes and cilantro top the tacos for an appetizing presentation. Ingredients

(8 servings)

3/4 cup reduced-fat sour cream

1 4-ounce can chopped green chiles

1 tablespoon fresh cilantro leaves

1 tablespoon lime juice

4 tilapia fillets (4 ounces each)

1/2 cup all-purpose flour

1 large egg white, beaten

1/2 cup panko bread crumbs

Cooking spray

1/2 teaspoon salt

1/2 teaspoon each white pepper, cayenne, paprika

8 6-inch corn tortillas, warmed

1 large tomato, finely chopped

Directions

  1. Place sour cream, chiles, cilantro and lime juice in a food processor; cover and process until blended. Set aside.
  2. Cut tilapia fillets lengthwise into two portions each.
  3. Place flour, egg white and breadcrumbs each in separate shallow bowls. Dip tilapia in flour, then egg white, then crumbs.
  4. Preheat air fryer to 400 degrees. In batches, arrange fillets in a single layer on a greased tray in air fryer basket; spritz with cooking spray. Cook until fish flakes easily with a fork, 10 to 12 minutes, turning once.
  5. Combine seasonings, sprinkle over fish. Place a portion of fish on each tortilla; top with about 2 tablespoons of sour cream mixture. Sprinkle with tomato. Top with additional cilantro if desired.
