Chicken & Corn Chowder

Winter is here, and there is nothing like a hot bowl of soup to warm you up at the end of the day. Enjoy this chowder 20 minutes after you walk in the door — the ultimate in fast comfort food!

Chicken & Corn Chowder Recipe

  • YIELD: 4 Servings

Ingredients

  • 2 tbsp olive oil light (or canola oil)
  • ½ cup onions chopped
  • ½ cup peppers chopped
  • ½ cup carrots diced
  • ½ cup celery diced
  • 2 garlic cloves chopped
  • 2 small red potatoes diced
  • 6 cups chicken broth low sodium
  • 1 tbsp Mrs. Dash Onion and Herb
  • 1 12oz package frozen corn
  • 1 8oz can cream of chicken soup condensed, reduced sodium
  • 2 cups chicken meat cooked, diced
  • ½ cup half and half fat free

Instructions

  1. Add 2 tbsp. oil to a large soup pot and heat over medium temperature. Add onions and peppers, carrots, celery and garlic to hot pan. Sauté for 4 minutes, stirring frequently, until lightly browned.
  2. Add potatoes and broth to the pot. Cover and simmer for 5 minutes.
  3. Add the Mrs. Dash, corn and cream of chicken soup to the pot. Stir to mix. Simmer for 15 minutes.
  4. Add the chicken and the half and half to the pot. Heat well and divide between 4 bowls.
