Chicken & Corn Chowder

Chicken & Corn Chowder Recipe

Ingredients
- 2 tbsp olive oil light (or canola oil)
- ½ cup onions chopped
- ½ cup peppers chopped
- ½ cup carrots diced
- ½ cup celery diced
- 2 garlic cloves chopped
- 2 small red potatoes diced
- 6 cups chicken broth low sodium
- 1 tbsp Mrs. Dash Onion and Herb
- 1 12oz package frozen corn
- 1 8oz can cream of chicken soup condensed, reduced sodium
- 2 cups chicken meat cooked, diced
- ½ cup half and half fat free
Instructions
- Add 2 tbsp. oil to a large soup pot and heat over medium temperature. Add onions and peppers, carrots, celery and garlic to hot pan. Sauté for 4 minutes, stirring frequently, until lightly browned.
- Add potatoes and broth to the pot. Cover and simmer for 5 minutes.
- Add the Mrs. Dash, corn and cream of chicken soup to the pot. Stir to mix. Simmer for 15 minutes.
- Add the chicken and the half and half to the pot. Heat well and divide between 4 bowls.
