Here is an easy-to-bake bread for a special holiday or any day of the year. The bread will satisfy your family’s sweet tooth and it makes a great DIY gift for a friend or neighbor.

Ingredients

¼ cup pecans, chopped
2 tablespoons brown sugar
1 ½ tablespoon stick butter, cut into small pieces
¼ teaspoon ground cinnamon
2 cups all-purpose flour
½ cup sugar
½ cup raisins
1 teaspoon baking soda
1 teaspoon salt
¾ teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon ground nutmeg
1 ¼ cups canned pumpkin
½ cup plain, low-fat yogurt
½ cup honey
1 teaspoon vanilla extract
1 egg
1 egg white
Cooking spray

Directions

  1. Preheat oven to 325°.
  2. Combine first four ingredients until crumbly. Set the topping mixture aside.
  3. To prepare bread, lightly spoon flour into dry measuring cups and level with a knife. Combine flour and the next seven ingredients (flour through nutmeg) in a large bowl.
  4. Whisk mixture well.
  5. Make a well in the center of the mixture. Combine the pumpkin and next four ingredients (pumpkin through eggs) in a bowl and add to flour mixture.
  6. Stir just until moist.
  7. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray. Sprinkle batter with topping.
  8. Bake for 50 minutes or until a wooden pick inserted in center comes out clean.
  9. Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on wire rack. Cut into 16 pieces. Enjoy!
