Get a refreshing taste of summer with our seasonal mocktails. These non-alcoholic drinks are the perfect addition to a balmy evening on the front stoop or back deck.

Cool as a Cucumber Spritzer

1 English (seedless) cucumber
1 tablespoon fresh lime juice
6-8 mint leaves
1 cup seltzer or tonic water
Ice
Optional garnish: cucumber slices, mint leaves and lime wedges
  1. Cut cucumber into chunks. Add to the bowl of a food processor and purée until smooth. Add purée to a mesh strainer and drain into a bowl. Use to back of a spoon to help press out the juice. Discard the pulp and refrigerate juice until ready to use.
  2. In a cocktail mixer, combine ¼ cup cucumber juice, 6 to 8 mint leaves and 1 tablespoon lime juice with ice. Shake vigorously and equally distribute strained mixture into two glasses filled with ice. Top each glass with ½ cup seltzer or tonic water and garnish with lime wedges.

Serves 2.

Tropical Mango Colada

1 cup ice
2 cups frozen mango
½ cup coconut milk
½ cup crushed pineapple with liquid
2 teaspoons lime juice
Water or extra liquid from the crushed pineapple as needed

Add coconut milk, crushed pineapple, lime juice, mango and ice to a blender. Purée until just smooth adding water or pineapple liquid, if needed, a scant tablespoon at a time to help it blend. Better to be too thick than too thin as it will quickly melt.

Serves 2.

Pink Berry Lemonade

6-7 cups prepared lemonade
1 cup fresh strawberries or raspberries, or a combination of the two
Optional garnish: fresh berries or lemon slices
  1. Add 1 cup lemonade and 1 cup berries to a blender. Purée until totally smooth.
  2. Strain purée into a pitcher and discard the seeds. Top with remaining lemonade and stir well. Add ice and any garnishes and serve.

Summery Peach Sangria

5 cups white cranberry peach juice or plain white peach juice, chilled
4 cups orange flavored seltzer, chilled
1-2 tablespoons fresh lime juice
For garnish: peach, orange and lime slices and fresh blueberries.

Combine peach juice, orange seltzer and lime juice in a large pitcher. Add ice, fresh fruit and serve.

Watermelon Slushie

3 cups diced watermelon, frozen
1 cup lime seltzer
Optional garnish: lime wedges

Add frozen watermelon and lime seltzer to a blender. Pulse until mostly smooth. Serve in frosted mugs garnished with lime wedges.

Note: if your blender struggles to purée the frozen watermelon, let the seltzer and watermelon sit for several minutes to soften slightly.
