Here is an easy-to-bake bread for a special holiday or any day of the year. The bread will satisfy your family’s sweet tooth and it makes a great DIY gift for a friend or neighbor.
Ingredients
¼ cup pecans, chopped |
2 tablespoons brown sugar |
1 ½ tablespoon stick butter, cut into small pieces |
¼ teaspoon ground cinnamon |
2 cups all-purpose flour |
½ cup sugar |
½ cup raisins |
1 teaspoon baking soda |
1 teaspoon salt |
¾ teaspoon ground cinnamon |
½ teaspoon ground cloves |
¼ teaspoon ground nutmeg |
1 ¼ cups canned pumpkin |
½ cup plain, low-fat yogurt |
½ cup honey |
1 teaspoon vanilla extract |
1 egg |
1 egg white |

Directions
- Preheat oven to 325°.
- Combine first four ingredients until crumbly. Set the topping mixture aside.
- To prepare bread, lightly spoon flour into dry measuring cups and level with a knife. Combine flour and the next seven ingredients (flour through nutmeg) in a large bowl.
- Whisk mixture well.
- Make a well in the center of the mixture. Combine the pumpkin and next four ingredients (pumpkin through eggs) in a bowl and add to flour mixture.
- Stir just until moist.
- Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray. Sprinkle batter with topping.
- Bake for 50 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on wire rack. Cut into 16 pieces. Enjoy!
