1⁄4 cup minced sweet onion
1 garlic clove, minced
3 tablespoons light sour cream
1⁄4 cup light mayonnaise
1⁄4 cup plain Greek yogurt
2 tablespoons lemon juice
1 teaspoon fresh, chopped dill
1⁄4 teaspoon black pepper
16 ounces cooked, cleaned shrimp meat
3 cups chopped lettuce
1 small cucumber, thinly sliced (remove peel if it is tough)
Directions
- Combine onion, garlic, sour cream, mayonnaise, yogurt, lemon juice, dill and black pepper in a bowl and mix thoroughly.
- Add shrimp to dressing and toss to coat.
- Place 1⁄2 cup of lettuce on each of 6 salad plates. Divide the shrimp mixture among the plates. Arrange the cucumber slices on top of the salad.
