Holiday Pumpkin Streusel Bread

Holiday Pumpkin Streusel Bread

Ingredients

  • 1/4 cup pecans chopped
  • 2 tbsp brown sugar
  • 1-1/2 tbsp stick butter cut into small pieces
  • 1/4 tsp cinnamon ground
  • 2 cups flour all-purpose
  • 1/2 cup sugar
  • 1/2 cup raisins
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 tsp cinnamon ground
  • 1/2 tsp cloves ground
  • 1/4 tsp nutmeg ground
  • 1-1/4 cup pumpkin canned
  • 1/2 cup low-fat yogurt plain
  • 1/2 cup honey
  • 1 tsp vanilla extract
  • 1 egg
  • 1 egg white
  • cooking spray

Instructions

  1. Preheat oven to 325 degrees F.
  2. Combine first 4 ingredients until crumbly. Set the topping mixture aside.
  3. To prepare bread, lightly spoon flour into dry measuring cups and level with a knife. Combine flour and the next 7 ingredients (flour through nutmeg) in a large bowl.
  4. Stir mixture well with a whisk.
  5. Make a well in the center of the mixture. Combine the pumpkin and next 4 ingredients (pumpkin through eggs) in a bowl and add to flour mixture.
  6. Stir just until moist.
  7. Spoon batter into a 9 x 5-inch loaf pan coated with cooking spray. Sprinkle batter with topping.
  8. Bake for 50 minutes or until a wooden pick inserted in center comes out clean.
  9. Cool in pan 10 minutes on a wire rack; remove from pan. Cool completely on wire rack. Cut into 16 pieces. Enjoy!
